Spinach Strawberry Salad with Poppy Seed Dressing

Printable Recipe

Baby Spinach

Red onion, chopped (as much as you like)

Strawberries, sliced

Candied Nuts (1/2 C nuts to 1/4 maple syrup)

Poppy Seed Dressing

Combine spinach and dressing and top with strawberries, nuts and red onion.

Poppy Seed Dressing:

1/2 canola oil

1/4 C apple cider vinegar

1/3 C maple

2 Tbsp sesame seeds

1 Tbsp poppy seeds

1 1/2 tsp dried minced onion

1/4 tsp Worcestershire sauce

1/4 tsp paprika.

Chinese Salad

Chinese salad--

2 heads lettuce-

1 cup diced chicken or turkey-

mandarin oranges-

Almonds-

Orange Peppers-

Olives-

Soba Noodles (cook, and cool, then throw into salad. ) They are expensive at the store, but in the oriental market they are cheaper and you can get buckwheat ones, instead of white)-

Dressing:

1 C. Canola oil-

1 T. Sesame oil-

1/2 c. honey-

3 T. each : rice or apple vinegar, yellow mustard, braggs liquid aminos (soy sauce)-

1/2 t. salt-

1 t. sesame seeds-

Combine well (it is better if made in advance and let it sit in the fridge for a while to combine better)

Fresh Maple-Fig Spread (Alysa cooks website)

Feel free to add more fresh figs if you want to highlight the fruit even more. If you only have dried figs on hand, rehydrate them in warm water and puree away.

This recipe is Vegan, Dairy-Free, Egg-Free, Gluten-Free, Soy-Free, and Refined Sugar-Free.

  • 1/4 Cup Cashews or Almonds
  • 1/4 Cup Walnuts
  • 6 Medium-Sized Fresh Figs (if not fresh, see note above)
  • 1/2 to 1 Tablespoon Maple Syrup (can sub honey or agave)
  • 1/4 Teaspoon Ground Cinnamon
  • 1/8 Teaspoon Salt

Grind the cashews or almonds somewhat into a powder (I use an electric spice/coffee grinder). Add all ingredients to your food processor, and pulse, chop, or blend to your desired consistency. I made mine fairly smooth, but with some walnut chunks. Feel free to adjust the sweetness, salt, and spices as desired.


Yields about 1 cup



Amazing Ice Cream

2 c. rice milk
3 c. frozen strawberries (a little more than half vita mix container)
3/4 cup cashews
1/2 c. raw honey or other sweetener
2 T maple Syrup
juice of two limes
lime zest
puree in blender
put into ice cream freezer.. This turned out so well and the consistency is a little thicker than frozen yogurt.. Definitely better tasting than those coconut milk ice creams.

Variations: (might need to freeze fruit first for better consistency?)
Fresh pineapple and orange zest/fresh orange juice
Peach and Lime
Banana and Lime or orange
Cherry and Lime
Blueberry and orange
Costco "spectrum blend" and 2 fresh mangoes
Raspberries and stevia

Whole Wheat Bread

7 cups whole wheat flour (freshly ground is very best)
2.5 T yeast
1/2 c wheat gluten
Mix Briefly
add 5 cups very warm water
Mix one minute and then let sit (sponge) for 10 minutes
then add
2/3 cup oil
2/3 cup honey
2 T lemon juice
2 T. Salt
Enough flour for a non sticky dough
knead 10 more minutes
Form into 4 loaves
Rise 30 minutes
Bake 34-40 minutes at 350 degrees

The Cafe Rio REcipe:
Soak Black Beans Overnight (I usually do around 4 cups so i have extra for refried beans, or soup)
Rinse beans and put in crockpot with 1 chopped onion, and chopped up Jalepeno and pepper.
Cook 5 hours on high, and salt at the end. Add a jar of salsa and any type of sweetener (1/2 to 1 cup depending on how sweet you want it.). Honey works great.

Rice: Put 2 cups of rice in frying pan with
2 T. oil,
1 bunch of chopped cilantro,
3-4 cloves garlic.
Fry up for a couple minutes to brown the rice. Pour into a pot to cook the rice and add
lime juice (the more the better, I like to use 3-4 limes) and 4 cups water and salt. cook.

Sauce:
1 c. Vegannaise (real recipe calls for mayo)
1 c. rice milk (1 c. buttermilk)
1 bunch cilantro
4-5 tomatillos (these grow very easily in your garden and you can freeze them without blanching or anything- we grew 3 plants and had enough for making this once every 2 weeks for almost the whole winter. They seriously grow like weeds..)
2 cloves garlic
Sprinkle of Cayenne pepper
Puree in the blender and refigerate till you are ready to eat it.

Put everything in a tortilla with some salad, tomatoes and avacados.

This should make enough for your family for a few days. This is probably the only meal my kids don't get sick of, and we have it for leftovers for lunch and dinner the next day sometimes... SO good..

Nutty Oatmeal Blender Waffles

2 Cups Milk or Milk Alternative
2 1/4 Cups Oats
1/2 Cup Peanut Butter or Almond Butter
2 T Pure Maple Syrup
1/4 t Salt
2 T Baking Powder

Put all ingredients in blender for about a minute. Batter will be thick & hearty.
Pour in preheated Waffle iron.
May need to cook longer than your typical waffle.
These also freeze great for future eating :)
